Took some crappie fillets and perch fillets and placed em in a sprayed baking dish so they formed a pocket for stuffing. The crappies I kinda gave a curl to form a stuffing spot and the perch I layed two filets together to make the pocket. Then stuffed the pockets with a crab mixture... one can of lump crab meat drained about a cup of imitation crab legs hand shredded a little a splash of lemon juice a spoonfull or two of mayo salt n pepper a handfull of seasoned panko breadcrumbs mix the "exact" measured ingredients and place a scoop in the pockets... I seasoned the fillets with a litte mediterranean mix seasoning. Salt and pepper work Then I sprinkled a little cracker crumbs on the fish and drizzled a little melted butter on them. And under the broiler for around 10 min, till the fish flaked and things colored up a bit... This is a nice mixture to stuff mushroom caps also. A good crab flavor thats not covered up....
