reinhard1 Posted March 7, 2011 Share Posted March 7, 2011 a lot of pepperoni and other types of sausage have "binders" such as powdered milk as part of the seasoning. this absorbes a lot of moisture. that may be the case here. strait seasonings without binders would still require moisture but not as much. i have noticed in some commercial ready to use seasonings they realy dont tell you how much additional moisture is needed. i usualy use beer for moisture. just me. good luck. For smaller diameter tubes, just use more water. I just stuffed slim jims using the 11# Cabela's stuffer and it was the cat's meow. Actually much easier than trying to crank the old cast iron unit. reinhard1 Posted March 29, 2011 Share Posted March 29, 2011 i have a 5 pound stuffer but not that brand. since i do smaller batch's [25 to 30 lbs] it's perfect for me. i bought mine for 100 bucks. verticle is the way to go in my opinion. not to say a larger volume is bad. if it meets your needs that's all that matters. if properly cleaned and maintained it should last you a long time. good luck.
