hoggs222 Posted July 21, 2010 Share Posted July 21, 2010 Some friends and I altered the recipe off of the Jiffy box.2 boxes of Jiffy (gotta use Jiffy, other brands don't taste as good)4 eggs (double egg makes it fluff up more)1 can creamed cornroasted pablono or jalapenos (diced and mixed in to taste)Skip the milk, creamed corn takes over that.Bake as usual in a buttered panCoat with a honey butter glaze (1/2 stick of melted butter and honey to taste) and set in the oven for 5 minutes Quote Link to comment Share on other sites More sharing options...

I made corn muffins a few weeks ago that had fresh corn off the cobb and apple sauce in the mix. They were excelent!Thanks for shareing... Jeremy airjer W Posted July 27, 2010 Share Posted July 27, 2010 If you like it sweet and moist1 1/4 cups sugar1/4 cup honey2 eggs1/2 cup butter1 cup milk1 cup water2 cups white or yellow cornmeal2 cups flour1 tablespoon baking powder1 teaspoon salt- butter 9x13 baking pan- preheat oven to 375- combine sugar, butter, eggs, milk, honey, and water- mix dry ingredients in a separate bowl- combine wet and dry ingredients mixing thoroughly- bake for 25-30 minutes Quote Link to comment Share on other sites More sharing options...
