Gluten Free Ideas

Just wondering if anyone else is on a Gluten Free diet??? My 7 year old daughter was just diagnosed with having Celiac Disease and I am looking for any GOOD recipes! I am learning that some gluten free options are terrible and others are better than what I am used to making! Thanks for any and all help!

if you have a whole foods store or other "natural food store" they usually have a good list. It is tough to do, my wife does a gluten free diet. remember veggies and check out some of the online websites, vegweb . com is a good one. i like the lime rice chips and some other things that are out there. good luck

I think pretty much all of the large grocery stores have a gluten free section in the healthy/natural foods sections nowadays.

I will be entertaining my cousin and her husband next weekend and he got the same diagnosis. Here's what she has told me in the past,they hide gluten in the weirdest places, sometimes an ingredient within an ingredient. They always keep bread or waffles frozen in the freezer and take out what you need, because gluten free bread, buns, waffles, and cake dry out quickly. Pillsbury or Betty Crocker make Gluten free box cake mixes (we will be trying one, available at Walmart or Marketplace). The gluten free pizzas aren't too bad, some pizza delivery places even make them. Tell your daughter she can eat all Snicker's bars she wants, they're gluten free.

Also not sure where you are from but sometimes they have gluten free clinics (at a clinic or hospital) which helps the family transision to the new lifestyle with recipes and such.

My cousin has told me that this was a big, big change for them and it takes commitment but her husband feels a million times better.

I was just reading a health blog about gluten-free diets right before I logged on and saw this. smile

Here are a few things they said are staples in a Gluten Free diet:

Cereals made without wheat or barley malt

Fruits and vegetables.

Lean meats

Low fat diary

Potatoes, rice, corn and beans

Specialty foods like pastas and breads made with alternative grains such as rice, potato, corn flours and starches

You have to read lables like crazy. Things like soy sauce will contain gluten, which I didn't expect. Fortunately, there are 100's more items on the store shelves that are now gluten free. My sister works for General Mills, and apparently they will be launching new stuff regularly in their new gluten free line. She is fortunate enough to be able to sit in on product sampling, and has said it tastes good.

My # 3 son's soon-to-be-wife has the same problem. My wife found some source of gluten free cook books. They came to visit last night and I made taco salad, with meat, cheese, lots of veggies, olives,peppers, and corn chips. For a small girl, she can pack it away. She also likes my chili and my version of German potato salad. For brunches, I make her sausages,bacon, scrambled eggs with everything, and hash browned potatoes. I've had to revamp my cooking ideas for her but its worth it.

I think as the years go by you will be suprised at the options in restaurants for Gluten free, many are beginning to note items on the menu as gluten free for their guests.

One thing I may suggest, and it is something that we carry on hand in the restaurant for special requests is potato flour, it is a phenomenal substitution item and can take the place of regular flour in alot of baked goods, soups and sauces. Othewise I have done rather well googling up items such as gluten free gniocchi, just lead into the item you want to cook with Gluten Free.
