beer batter

No homemade recipe for you, but we've tried every storebought mix and I have to tell you, the taste and texture McCormick's "Fish and Chips" batter produces (using Miller Lite instead of water) is unbelievable. We beer batter tilapia fillets with that and I'll tell you what, you can keep the best beer battered cod or walleye at any restaurant I've eaten at and I've eaten at plenty from budget to mortgage your house to eat their places. It produces a nice shell on the outside that's not too thick or thin and tastes awesome.

Here's one that I like:

1 cup corn meal

1/2 cup flour

1 1/2 cups corn starch

1/2 tsp salt

Beer to make a thin batter.

Pat the fillets dry with paper towels and dip in the batter. Deep fry till golden. For a lighter batter, shift the flour and corn starch proportions.

I make my beer batter with a combo of two or three different flavors of shorelunch brand batter.

I first shake my fish fillets in a dry coating of frying magic and then dip them into my beer batter made from the shorelunch combo.

It seems to work well for me.

I have tried one of the McCormick brands of batter and it did get may attention. I'll be checking that out again
