mskyfshntchr Posted February 2, 2009 Share Posted February 2, 2009 I buy golden dipt beer batter. It is very good. Just add beer until your desired consistency. It is also great on shrimp too!! I also soak my fish in beer prior to cooking- one thing I do is squeeze the fish and shrimp before putting them into the beer. Gets rid of some of the water and adds a little flavor. Bohunk Posted February 11, 2009 Share Posted February 11, 2009 Much like was said previously, but I use Krusteaz pancake mix with Sprite or 7-Up, instead of beer. Seems to make the batter a little sweeter. It's not that I don't like batter with the beer, we just prefer it this way. Also works great on homemade onion rings! LABS4ME Posted February 11, 2009 Share Posted February 11, 2009 After soaking your fillet, immediatley roll it in seasoned flour prior to dipping it in the beer batter. This helps to make the batter adhere to the fillet. I also use a 'flat' beer. Open one up and leave in fridge over night. I like a heavier beer... more flavor. You can also substitute club soda instead of beer for a lighter flavor.
