experimenting with fish recipes, just thought I would share one.

I have been getting pretty creative while preparing fish lately. I just have to mix it up from fried fish every once in a while. I came up with this last night with what ever I had in my fridge. Pretty much how I come up with everything I cook.

It is just a simple butter spread: soften butter just till you can whip it. Your looking for a nice smooth consistency. Add fresh diced garlic,and fresh chopped basil, kosher salt and fresh cracked pepper. Lightly season fillets with old bay, then spread the mixture over the top of the fillets. I just did the top side. You dont really have to cake it on, just a nice even spread. Broil the fish on high till it flakes apart. It should be pretty golden.

I really liked the fish, I used pike. The garlic roasted, but did not burn. All and all I was pleased. I probably would have sqeezed a little fresh lemon juice in the spread if I had it in the fridge......enjoy!!!!!

How about trying the walleye cake recipe that they have in the new issue of In-Fisherman. That one looks pretty good. I'm planning on giving it a try one of these days. You should be able to use any type of white flaky fish with it so it would be a great way to use some smaller panfish fillets.
