Tom Linderholm Posted November 28, 2008 Share Posted November 28, 2008 Natalie,Cooking elk in a lot of ways is similar to venison except I find the cuts of meat to be somewhat looser when it comes to the backstraps and such and typically has a bit more of a game flavor.A couple recomendations I have when using Elk:I typically will pair it with a sweeter side, say roasted yams, spiced berry sauces utilizing the sweet yet spicey aspects to help tame the game flavor to make it palatable for most.The other thing I try to do is introduce some fat to my dishes, whether it be bacon, ground pork, butter, etc....
