straydog Posted February 4, 2008 Share Posted February 4, 2008 sweet & hot1 1/4 cup coy sauce1/2 cup worchester sauce1/3 cup steak sauce1/4 - 1/2 cup hot sauce2 tsp koser salt1 tsp black pepper1 tsp onion powder1 1/2 tsp garlic power1 tsp cayenne pepper1/2 cup brown sugar1/2 cup honeyafter a couple days marinaiding I slow cook in the smoker. Doop Posted February 4, 2008 Author Share Posted February 4, 2008 what cut of meat do you use?i used a round steak yesterday and it was okay....I've heard that an eye of round is the best to use.I put about 4 or 5 tsp's in the jerky I made yesterday and it really wasn't hot enough....does the addition of hot sauce really fire this recipe up? peder Posted February 4, 2008 Share Posted February 4, 2008 IF you want it hot dust the meat with more cayanne powder after you take it out of the marinade, while its on the rack of the dehydrator or smoker. Doop Posted February 5, 2008 Author Share Posted February 5, 2008 I don't let my temp get above 150. I sometimes have to open the door slightly to keep the temperature from getting too high. I try to smoke at least for 5-6 hours before I even peek at it. Some pieces smoke faster than others. When I take my jerky off the rack...I let it sit at room temp for a few minutes and then put it in a ziploc bag and back in the fridge. Link to comment Share on other sites More sharing options...
