I think it's almost impossible to mess up lakers-the ingredients and methods you listed will work great. I also like to use olive oil, old bay seasoning, lemon pepper, green onions, bbq sauce, white wine...OK now I'm hungry. I usually fillet and leave skin on and then wrap in tinfoil and grill but steaks will work just fine. You might want to brush some olive oil on your grill grate or place fish on a piece of tinfoil to make sure it doesn't stick. If I have a bunch of fish it's fun to make 3 or 4 different combos w/ various ingredients and wrapped in foil or let guests make their own and have everybody sample the creations. Batter frying, boiling and baking work well too. Leftovers can go in scrambled eggs, mixed w/ flaovored rice or fish cakes. I'm eating some for dinner tomorrow and hoping to hook a few more this weekend. Life is good;-)

Since you steaked it you can do each steak different.

Top them with.

Butter, Dill, salt pepper.

Barbecue sauce.

Honey Mustard

Brown sugar

Lemon Pepper, Butter

Louisiana Hot Sauce

Use your imagination!

You can wrap them in tinfoil or grill the steaks on a direct medium heat with the lid closed.

Add some smoke.

Gas grill, take your chips or twigs and wrap that in tinfoil leaving a small hole. Put that on the flames. Charcoal, soak the chips first and throw them in the coals.
