GF Fish

My wife was diagnosed with a gluten sensitivity recently so I had to mix things up for how I fried fish as many of the coatings are flour based. I've come up with a very simple and tasty alternative that she probably likes even more than the old way. We have had it on several occassions now and she likes it a lot. And this is coming from someone who never liked eating fish until after we were married. Anyways here is what I do:

Soak fillet in enough milk so the milk is just covering the fillets. If I have time I like to soak them at least 1 hour. Just prior to frying I beat two eggs in a bowl and pour in the milk used during the soak and mix together. In a gallon size zip lock freezer bag I put in 2 cups of cornmeal and 1/4 cup of garlic salt. Zip it up and mix the two ingredients up. Dip the fillets one at a time into the egg/mix batter. Allow excess batter to drip off and then put the fillet in the bag. Put a few fillets in the bag, seal and shake it up covering the fillets. Open the bag and fry as usual.

Very easy way and if you have left over mix you can seal up the bag, put it in the freezer and take it out the next time you want fish.

Down to earth, try this, it is not fried but is very tasty, take your fillets and season them with pepper, salt whatever you like, a little butter, some lemon juice if you wish, then liberally sprinkle dill weed that you buy in those season jars all over the fish,use plenty then micro wave for a couple of minutes, take out and sprinkle with parmesian cheese and cook for about another minute, does not take long, depends on size of fillet, a couple of minutes and then cheese on for a minute and ready to go. i really enjoy

If you Google madwomenfoods you'll find a shop, located in the metro, that sells Gluten free products: breads, pizza's all kinds of stuff, and surprisingly enough, everything I've had taste good.

I know you have a couple of good HyVee's in Rochester. Ours just started carrying GF free flours. Has your wife tried any of those products yet? I have a friend with ciliac disease, so she needs all of the GF free stuff as well.

    • If you really want to treat your wife (and yourself) with a remote operated trolling motor, the Minn Kota Ulterra is about easy as it gets.  Auto stow and deploy is pretty awesome.  You just have to turn the motor on when you go out and that the last time you have to touch it.   24V 80lb.  60 inch shaft is probably the right length for your boat.  They ain’t cheap - about $3k - but neither one of you would have to leave your seat to use it all day.
    • Wanderer, thanks for your reply. I do intend for it to be 24 volt, with a thrust of 70-80. Spot lock is a must (my wife is looking forward to not being the anchor person any more).  With my old boat we did quite a lot of pulling shad raps and hot n tots, using the trolling motor. Unlikely that we will fish in whitecaps, did plenty of that when I was younger. I also need a wireless remote, not going back to a foot pedal. We do a fair amount of bobber fishing. I don't think I will bother with a depth finder on the trolling motor. I am leaning toward moving my Garmin depth finder from my old boat to the new one, just because I am so used to it and it works well for me. I am 70 years old and kinda set in my ways...
    • Dang, new content and now answers.   First, congrats on the new boat!   My recommendation is to get the most thrust you can in 24V, assuming a boat that size isn’t running 36V.  80 might be tops?  I’m partial to MinnKota.     How do you plan to use the trolling motor is an important question too.     All weather or just nice weather?   Casting a lot or bait dragging?   Bobber or panfish fishing?   Spot lock?  Networked with depth finders?  What brand of depth finders?
