BobT Posted October 23, 2006 Share Posted October 23, 2006 I believe the biggest problem with thawing and refreezing is the process causes dehydration of the meat. As a result the quality and degrade with each instance plus there is a higher risk of freezer burn, which is basically freeze-dried meat. Like they said already. Wrap it tight to prevent freezer burn. Vacuum pack would be best. Edit: Partially freezing the meat before grinding makes it much easier to grind.
