Wrap in bacon and bake in a pan with a little wine in the bottom. Some of the smaller birds, doves, woodcock, Huns I also like to put in to Jambalaya. Really tastes good. smoked perch Posted August 23, 2004 Share Posted August 23, 2004 yes, good call scooter. i was going to recommend the bacon wrap as well. another of my favorites with duck, goose, and pheasant for appetizers is nuggets. just make up a batter like you would for fish, ever beer batter is great. then fry them in oil. excellent. don't forget the cayanne pepper, and your favorite seasonings. -perch. jbdragon Posted August 24, 2004 Share Posted August 24, 2004 Another varient on the bacon wrapping:I remove the meat from the breast giving you two pieces about the size of your thumb. Season and wrap each piece with bacon, slide a toothpick through to secure and grill slowly on low heat until the bacon is crispy. They are AWSOME appetizers. Lake Alice Posted August 24, 2004 Share Posted August 24, 2004 Even better: marinade overnight first in a soy/ginger marinade, and brush with a little teryaki glaze while grilling. Add a water chestnut inside the wrap as well.
