Mr Special Posted August 4, 2004 Share Posted August 4, 2004 Warm the oven to 450, take a baking dish and line it with tinfoil, place filets skin side down "if they have skin on them", add seasoning salt, garlic powder, and slice butter on top of filets. Place in oven 10-15mins later they should be done. Swamp Scooter Posted August 4, 2004 Share Posted August 4, 2004 Best way we have found out andused in our restaurant is to use a paper bag! place fillets on parchment and season with pepper, salt, paprika, or whatever you like then place finely cut veggies( carrot, cleery tops, onions, herbs) on top. season a little more and place a pat of butter on top of "pile" add a dash of white wine and place in the grocery bag, on parchment. Fold up ends of bag and staple shut. Wet outside of bag throoughly and place in hot oven, 450. Cook 10-15 minutes and check to see bag is not getting too dry or brown. The Grebe Posted August 7, 2004 Share Posted August 7, 2004 Okay, "I'am not crook...I mean a cook!" I love to fish and I can eat fish with the best of them! I do dabble from time to time and I have a couple of ways of doing up Walleyes, that I really like. Say you come into a walleye of say 4 pounds or so. In my opinion, these are not he best for frying, but they are dynomite baked. (Although I did have some really good ones in this weight range, out of Bowstring one time?)Cut the fillet into portion sized chunks (Some peoples portions are bigger then others) Bring a pot of salted water to a light boil and lower the chunks into the water. Poach until you figure they are close to done and remove them from the water. Drain them off in a cowlander (Sp)and arrange them on a baking tin covered with Aluminum foil that is folded up around the edges. I drizzle some melted butter over the pieces, I sprinkle the pieces with Black pepper, Paprika, Red pepper, and Parsley and put them under the broiler until they start to brown on the top. Remove from broiler and serve with whatever side dishes suit your fancy. A chunk on a fork, dipped in drawn butter, is hard to beat! It's my spin off of "Torsk" poor mans Lobster! Jim W Posted August 11, 2004 Share Posted August 11, 2004 I've posted this before, but who cares eh?Lay your full filets onto a buttered aluminum foiled pan.Using real butter and fresh Basil(has to be fresh leafy basil), cut , liberally, chunks of butter taking torn basil leaves and coat the filets.Then cut a fresh lemon laying slices on top of the filets.Bake for 10-15 minutes...best broiled. I remembered long ago eating fish baked in sort of a cake recipe, but not too sweet a cake. So, I gave it a try with Hungry Jack pancake mix, into a glass baking dish, sprayed with Pam!Used the "light, fluffy recipe, with 2 eggs" but I addeded some pepper seasoning. Then I put in fillets, some baby carrots, chopped celery, and very thinly sliced potatoes. Baked at least an hour. Actually turned out great!No, I do not pour syrup on it. I will try this again, perhaps adding butter somehow.Also, potatoes must be VERY thinly sliced and spread out, else they don't get baked thoroughly. ps: Been out of college over 25 years, and have not since used any non-px drugs.
