Soak the sedar plank for a minimum of 1/2 hour in water.2 pounds of salmon marinate for 1 hour.Marinade:1/3 cup scotch3 tablspoon of olive oil2 tablspoons of brown sugar2 tablespoons of minced garlic2 tablespoons of soy uce1/2 teaspoon of pepperLay salmon skin side down on cedar plank.cook on grill until salmon is flakey. 89Bronco Posted December 8, 2003 Share Posted December 8, 2003 This is my favorite...Combine all of these in a small bowl:2 1/2 T garlic powder2 1/2 T ground pepper 2 T seasoned salt 1 T white pepper 1 T cayenne 1 T onion powder 1/2 T paprika 1/2 T dried parsley flakes(I usually mix up a double batch so I have more than enough.)Cut up 1 large onion into thin slices. Place your salmon fillet(s) skin side down on a long sheet of heavy duty foil. Add the seasoning mix evenly over the fish. Layer the sliced onion PLUS 1 1/2 cups black olives and 1 cup shredded mozzarella cheese over the fish. Fold over foil and crimp the sides so that it's sealed tightly (like a foil package). Grill covered for 25 to 30 minutes on medium heat. (Or until fish starts to flake...depends on how big/thick the fillets are.) Good luck! Link to comment Share on other sites More sharing options...
hunt4food Posted December 9, 2003 Share Posted December 9, 2003 Here's an easy one that tastes great. Using aluminum foil, create a "bowl". Dump some zesty italian salad dressing in it. Add the fish. pour remaing dressing on top. Wrap tightly. Grill until finished. Depending on your grill temperature, this will take about 10-12 minutes per inch of thckness. tulikow Posted December 11, 2003 Share Posted December 11, 2003 I love grilled salmon and this is one of my favorite recipes: a fresh salmon fillet (I prefer sockeye) dill (fresh or dried) brown sugar up to 1 tablespoon of butter freshly squeezed lemon juice cedar chips1. soak the cedar chips in water for atleast 25 minutes2. melt butter in a microwave3. drizzle the butter onto the fillet4. sqeeze as much lemon juice as you like onto the fillet5. sprinkle th fillet with dill6. add the cedar chips to the grill a few minutes before adding the salmon7. put the salmon onto the grill8. after 7-8 minutes sprinkle the brown sugar over the fillet9. grill for about 17-20 minutes Enjoy Link to comment Share on other sites More sharing options...
pbowhunter Posted December 11, 2003 Share Posted December 11, 2003 Try this onehalf red onion diced in 1/2 cup white vinegar and 1 1/2 cups white whine bring to boil and let reduce until around 2 to 3 table spoons of the juice. Strain onions then put juice back in pot and add 3/4 cup cream 2 tablespoons lemon juice and 1 pound butter, cook on low heat otherwise butter will seperate.then pour sauce over your salmon. I don't remember where I got this one.Honey-Cured Smoked Salmon · 1 quart water · 1/2 cup salt · 3/4 cup honey · 1/4 cup golden rum · 1/4 cup lemon juice · 10 cloves · 10 allspice berries · 1 bay leaf · 1 large fillet of salmon Combine all the ingredients besides the salmon to make the brine. Place the salmon, skin side up, in a non-reactive dish and cover with brining liquid. Allow fish to brine for 2 hours. Rinse the salmon in fresh water and pat dry with papertowels. Place salmon on a drying rack (or grill rack that you will use to smoke the salmon on) and allow to air dry for about 1 hour. Smoke salmon skin side down for about 1 1/2 hours, keeping temperature at 160 degrees farenheit.. Link to comment Share on other sites More sharing options...
Canuck Posted December 23, 2003 Share Posted December 23, 2003 Start with a slab of salmon (fillet) with the skin on. Grind fresh pepper (I am not a pepper fan but it is needed here) then take cold butter about 1/8" thick and cover the salmon, then a head of garlic crushed over the fillet. I use a whole head for about a 4 lb fillet. Squeeze a half lemon on top of this then wrap in tin foil and place on the barbaque for about 15 minutes then open the top for 5 minutes to let the garlic green up.
