3pronghook Posted September 1, 2006 Share Posted September 1, 2006 i use a food processor. start with a couple cloves of garlic, TBS lime juice, tsp red wine vinegar, 1/2 tsp salt, fresh cilantro, green onions and some hot peppers. i process this until well chopped. then i add 4-5 tomatoes, blanch the skins off, then i cut in half to dig out the seeds and just process a few short bursts cause i like it chunky. you can cook it and process it to seal it if you like, but it will last fresh in the fridge for a week. Bear in mind I like mine a little on the hot side so you may want to go easy on the peppers at first, especially the seeds. 16 C. Chopped Tomatoes (I chop mine rather large 3/4") 2 C. Seeded and Chopped Green Peppers 3 Stalks chopped celery 2 C. Chopped Onions 6 Chopped Cloves Garlic 3 tsp. Salt 2 tsp. Black Pepper 2 Tbls. Chili Powder 2 tsp. Cumin 4 tsp. Sugar 3 tsp. Brown Sugar 3/4 C. Apple cider vinegar 3 Chopped Jalapeno Peppers 3 Chopped Banana Peppers 3 Chopped Chili Peppers Remove seeds if desired for less heat.Bring to boil and simmer until desired consistency. I will try it, it looks fantastic) anyway, I had a bunch of cherry tomatoes from my 3 plants to use up... but I saw a recipee that called for serrano peppers... so I got a couple to put in the salsa... I cut one in half and with a spoon took out all the seeds and heart. I then took s sniff... hmmmm smells like green pepper.. maybe take a bite to see how hot it is to see if my recipee needs 2 or just 1?... OHHHHH MYYYYYYY GAAAAAAAAAAAAAAAAAAAWWWWWWWWWWWWWWWWWWDDDDDDDDDDDDDDDDDd. what kind of devil spawn even grows these horrible little creatures. I'm going to pee all night from all the liquid I had to pour in my mouth!(probably more info than you needed to know) anyway.. I decided that just one of them little #^@&%# will be enough the other will rot! The rest of the recipe I used... bunch of green onions, little garlic, bunch of red onion, lots of maters, and cilantro..a dash of salt and a dash of sugar, and I liked Chefs kick and through in 2 shots of Tequilla.
