Cleaning a Dove?

We just cut the breast meat out of ours, you end up with 2 pieces each about the size of a silver dollar, probably 1/4 inch thick. We cooked them in a wok with a mix of olive oil, garlic, onions, and seasonings, cooked them hot and fast and served them as appetizer, really good if you dip them in Franks Red Hot sauce.

cut the skin where you would to gut it, grab that skin and peel it off the breast, put your thumb in the body cavity and grab the breast, pull up towards the head and take a shears and cut the bones that are still holding the breast to the bird, then the breast comes right off. YOu leave the bone underneath the meat cause it gives you a "grilling rack" and keeps the meat moister. Its also easier and you dont lose as much meat and filleting the meat off the bone.

I spent 8 years in Oklahoma and I lived for dove season. With that said here is how it is done. No tools needed just pull off the head snap off the wings and push your finger up thier wazoo and rip the breast off. Then remove the feathers and skin on breast and rinse off. It sounds crude but I have cleaned a ton of dove and thats how I do it. Rub some BBQ sauce on them and slow cook them on the BBQ and they are good. If they are to gamie for you soak in butter milk over night and use recipe above.
With that said where are you guys going to find these dove to hunt. I am new to Minnesota and I am not sure where I can hunt? I don't want your favorite spot just an idea of where to go. Thanks and happy hunting.
