Smoked Sausage Bean and Spinach Pasta

Upper 80's and I'm doing comfort meals, go figure.  Maybe it's because Viking football has been on or is it because of what I wait for every year, DEER CAMP.  Whatever, here is something I made yesterday.  Pasta is something I love so you can just about through anything in pasta and it's great.  What better thing to throw in it than my smoked ring bologna.  This isn't my recipe but like everything else I do even if it is my original recipe I seem to tweek  all of them.  This turned out very good.  Having left overs tonight.  Here is the recipe:

 

1 14 oz. package of smoked sausage  [ I doubled the recipe and used 2 rings of my ring bologna]

2 tsp of olive oil.  [ Really, I use what ever I need, that was too little]

6 oz of bow tie pasta, cooked and drained or pasta of your choice.  [I used Rotini style but doesn't matter]

1 15 oz can of white beans, drained and rinsed

1 zucchini, sliced 

1/2 cup vegetable broth [I use beef broth]

1 15 oz can of diced tomatoes  [ I used the garlic onion flavor]

1  6 oz pack of spinach [pre-washed]

1 T diced garlic from a jar [I added this to the recpe]

 

I cook my pasta last.  I don't like it sitting around while I'm doing everything else which is what most recipe's call for.  In a large sauce pan, put in the olive oil and fry the sausage until a little brown, and set aside.  Add the zucchini and vegetable broth to the skillet and simmer until zucchini are soft.  Add white beans and tomatoes and simmer for a few minutes along with the garlic.  Then put the spinach in the pan and stir it in there until the leaves wilt.  Turn the heat on low and stir in the pasta, and smoked sausage while mixing well.  Leave everything in there for a few minutes and keep mixing it.  Then it is ready to serve.  Here are some pic's. good luck.IMG_2256.thumb.jpg.349e9c4a2a06b0649f979

In a bowl it goes!!  Don't like using a plate for this, I like the juices to concentrate with the meal and I used a spoon!!!  good luck.

We had left overs last night and I added another can of beef broth to it.  Meals like this I like to use a spoon.  I doubled the recipe and the next time I'm going to add a little more beef broth from the beginning.   good luck.

    • If you really want to treat your wife (and yourself) with a remote operated trolling motor, the Minn Kota Ulterra is about easy as it gets.  Auto stow and deploy is pretty awesome.  You just have to turn the motor on when you go out and that the last time you have to touch it.   24V 80lb.  60 inch shaft is probably the right length for your boat.  They ain’t cheap - about $3k - but neither one of you would have to leave your seat to use it all day.
    • Wanderer, thanks for your reply. I do intend for it to be 24 volt, with a thrust of 70-80. Spot lock is a must (my wife is looking forward to not being the anchor person any more).  With my old boat we did quite a lot of pulling shad raps and hot n tots, using the trolling motor. Unlikely that we will fish in whitecaps, did plenty of that when I was younger. I also need a wireless remote, not going back to a foot pedal. We do a fair amount of bobber fishing. I don't think I will bother with a depth finder on the trolling motor. I am leaning toward moving my Garmin depth finder from my old boat to the new one, just because I am so used to it and it works well for me. I am 70 years old and kinda set in my ways...
    • Dang, new content and now answers.   First, congrats on the new boat!   My recommendation is to get the most thrust you can in 24V, assuming a boat that size isn’t running 36V.  80 might be tops?  I’m partial to MinnKota.     How do you plan to use the trolling motor is an important question too.     All weather or just nice weather?   Casting a lot or bait dragging?   Bobber or panfish fishing?   Spot lock?  Networked with depth finders?  What brand of depth finders?
