For those of you that make your jerky with this stuff, do you store it in the fridge/freezer, or out on the cupboard?

Just curious if anybody keeps it unrefrigerated after you make it. And if you do, how long have you kept it unrefrigerated?

I keep in fridge or freezer depending on how much I made. I vac seal a dozen to 15 in a pac and it's probably good forever.

That's what I do too. Just curious if it'll last out on the cupboard too, since its cured.

So far it hasn't lasted long enough to need refrigeration

Just using cure does not make jerky shelf stable. You either need to make it extemely dry or lower the Ph content of the meat by using either citric or lactic acid.

Not certain, but I believe it says right on the directions to keep in fridge for no more than a week, or keep frozen.

I would think it could be stored longer in fridge if vac sealed. I made a couple hundred back in November and have 3 dozen left. Just opened a pak and mmmmm! But the other 2 paks are going into the freezer.
