Butt side up/neck side up or if small enough lay flat with breast up or what. Wondering about oil runoff from bird. Saw on prior threads, about saving oil by freezing have not tried saving it but what do you put the oil back into. Seems like it would take forever to thaw out??? As far as reusing the oil just let the oil cool down to around 100 degrees and then strain and funnel back into original container. As far as thawing oil just take it out of the freezer a couple of days prior to using it. Make sure you read up on the safety tips so you don't burn your house down. Make sure turkey is fully thawed and i typically turn the flame off when lowering the turkey into the oil. That way if the oil does spill over there is no open flame to ignite it. Happy Christmas.
