So I had a check engine light come on this am and I checked it and this code came up which I did some research and it could be a thermostat (203*) or coolant temp sensor I have a 2010 Ram with a 5.7 Hemi and I noticed that I'm only getting 192-194* on the engine temp. So my guess its the Thermostat so how much work is it to swap out I haven't changed one since my 79 K Blazer

not sure on a 2010 but the older ones I have done where a 5 minute job. Follow the upper hose to the engine, remove the two bolts that hold the outlet housing to the thermostat housing, replace the thermostat.

How much coolant runs out when you do that? Last time I did one I got it in backwards and almost ended up late to my wedding due to overheated engine. That'll teach me to take notes.
