I make my own rubs and usually end up using one that is similar to my rib rub but without the brown sugar.Garlic powderOnion powderPaprikaBlack pepperSaltRed pepperLittle Ancho Chili powderetc...Really the mix changes every time probably.After the rub I let it smoke at 225-250 for an hour or so. I don't think you need a ton of smoke for chicken wings. With the colder temps I'd probably just use the smoker to get that first hour or so of smoke and then I'd move the into the oven to finish off. After the smoke you just need heat, that can be done just as easily in the oven or on a grill.If you want them sauced you can do that toward the end of the cooking or just let people sauce them on their plate if they'd like. If I do it during cooking I usually wait until just a few minutes before I pull them out. I let them cook with the sauce just until you see the first hint of the sugar in the sauce start to caramelize then they come out. Quote Link to comment Share on other sites More sharing options...
