Bryce
Pheasant breast cut to bite size. Wrap with bacon and sprinkle with brown sugar. Bake for about an hour. Few drops of bbq sauce on each bite last 10 minutes.
Pherris
I make a smoked pheasant cracker spread. Pretty simple but it always ends up being the fist dish gone.I debone the pheasant and put the meat in the food processor. Then I mix it in a bowl with mayo and Famous Dave's sweet hot pickle relish. Stir let set in the fridge overnight and serve wit crackers. Not much to it but it is always a big hit. Another appetizer I make is buffalo pheasant fingers. Gut the breasts into strips dip in egg wash and shore lunch and flash fry in hot oil then drain on paper towel and put in a bowl with hot sauce of choice and shake it up to coat them and serve. The next one is a bit more work but also very tasty. Pheasant wraps.I only use the breasts only on this recipie. I pound them flat then spread cream cheese add sautéed peppers and onions roll up wrap with bacon and grill. When they are done cut into slices and and put the slices on a plate with toothpicks. Good Eating!

Thx and happy thanksgiving! My favorite is a modified popper recipe. Buy some baby bell peppers and/or jalapeños, cut in half, take off stem and scrape out seeds. Take a block of cream cheese and put into a bowl, mix iIn some of your favorite seasonings and stir, I use garlic powder, cayenne, srirasha/hot sauce and misc other things. Next, fill up the pepper with cream cheese, put a small chunk of pheasant on it and wrap in bacon. Final step is to put a toothpick through to old it all together.I grill mine but you could bake as well.
FishHawk11
I made some cordon blue bites on Thanksgiving and didn't even make it around the house before they were gone. Pound the breasts flat, put a slice of ham and swiss, roll it up. Rolled in flour, then egg, then seasoned bread crumbs and in the oven for 30 min's @ 350. I cut them into bite sized pieces. These were to die for.
