eyeguy 54 Posted November 20, 2013 Share Posted November 20, 2013 well I did 4 1/2 pounds again today. smoking eggs before the legs so decided to do 2 racks of jerky from the stuff ready for the dehydrator with hi mountain hickory. smoked about 20 with the eggs. cherry wood for 45 minutes at 145. then on the dehydrator with the rest already drying. Then the legs went into the smoker. Sitting here tonight and eating 6 of each with a bottle of Shriaz. For my tastebuds I prefer the non smoked. The smoked is good but the smoke really takes over on the flavor and the texture is a little rougher. I can taste more flavors with the stuff only dried. And I really like the texture better. Jalepeno cheese deer brat and egg for breakfast, smoked turkey leg and a venny italian sausage burger for lunch with a smoked egg for desert, venny straps with cream of mushroom soup mixed with corn and parmesan noodles for supper,(the mrs loved that!) and now lottsa jerky. man i love this time of the year!!
