I assure you this is an anomaly...most venison doesn't last the winter in my house. That said, if I thaw it out and it passes the eye (and nose) test, do you think this would be okay for jerky, or am I pushing my luck? BobT Posted November 29, 2012 Share Posted November 29, 2012 Meat in a freezer won't necessarily go rancid but will most often suffer from freezer burn. You can see this with your eyes. Like you, I recently found an old package of bulk sausage in the bottom of our freezer that I thought was long gone. It was vacuum packed in 2008! I opened the package and it was as if I just put it in there last week. Tasted fine. In cases where I found freezer burn, if it isn't too bad I'll cut off the burned portion and use the rest.
