bloc004 Posted November 14, 2012 Share Posted November 14, 2012 Made 11.5 pounds of bacon for the first time. Turned out great. Thawed out In the brine Rinsed and in the fridge to form the pellicle. In the smoker for 8 hours with about 8 small handfulls of maple chips at 90 degrees. Out of the smoker and into the fridge, waiting to be sliced. Sliced view Really happy with how it turned out. I would suggest doing this to everyone, as the process is a little intimidating, but if you have a smoker and follow a few simple steps, it is very easy! If you call any meat place, they usually get them in and cut them up, but I had them save me a belly. I do not remember what the price was a pound. All the old time smoke houses were made of wood, back in the day when folks on the farm butchered and processed their own meat. I never looked at the one on my Uncle's place enough to know how the fire and smoke got in. I was a kid and not interested. More interested in shooting stuff with a bb gun.
