Okay, I bought a smoker box thing that uses wood pellets to smoke with. Up until now I have been using my grill by using one burner, on low, and the meat off to the side of the burner on the top rack and the smoker box (temp consistently at 225-240). .

My question is my smoker is gas and the wood chunks used to sit on a steel plate and the propane burner would burn the wood to create smoke. My problem is how do I use my pellet smoker tray and not ignite all the pellets due to the heat of the steel plate? Would fireplace bricks under neath the pellet box work best? Any ideas?

i've never done anything like this, for i have electric. i seen a guy one time put sand in a metal bowl and then put chips on top of the sand. i dont think pellets would be any different. he had the bowl on a rack above the burner. maby the sand acts as a insulator but still get hot enough to make the pellets smoke without burning. hopefully others have other suggestions. good luck.

Well as of right now, i will p the smoker tray on the rack above the water pan, and cover it with my lid to my cast iron chicken smoker....just to keep fat from igniting the entire pan of wood pellets......in theory it should work very nicely
