Cherry for fish?

I havn't tried it. How is it? I prefer hickory over the alderwood for fish.

When smoking fish, I almost always use cherry. Hickory is my second choice, and what I use for almost everything else.

I often start my fish with alder or apple, but like a cherry finish. I think along with a bump in flavor toward the end.... cherry gives me a nice color.

I've noticed cherry gives me a lighter, nicer color as well.

I think the cherry helps me get a red color on trout and salmon.
