leech~~ Posted February 26, 2012 Share Posted February 26, 2012 I checked the HSO Smoking thread and didn't find a lot. What is your process for brine-smoke-heat? Do you fillet or smoke whole? I have done some once and they didn't turn out to bad. I was wondering if you smoked whole would the bones peel out better if you leave the tail on and smoke whole, would all the bones peel out like other smoked fish?
