Buffalo summer sausage and snack stix??

Has anyone ever used buffalo for summer sausage and/or snack stix?

My brother in law will be down in a few weeks and has a plentiful bounty of ground buffalo. He wants to make some sausage and stix.

Wondering if anyone has made these before? If so, what % of pork did you use? Anything else you noticed with the buffalo that might be different than beef or venison?

Planning on using the LEM mix for these. I would think the buffalo is similar enough to beef and venison that it should turn out good enough for my b-i-l. grin

i've never worked with buffalo meat as far as making anything from it personaly. i have sold it when i was working. for summer sausage i would use 2/3 buffalo and one third pork butt or 75% ground beef. for sticks i would use the same. sounds like some tasty stuff ahead. good luck.

Is there fat in the buffalo burger?Does it taste OK.You might not need any extra fat.Most buffalo ranches that process their own and make things don't use any pork or beef.Straight buffalo.To me it tastes like beef.All depends on how lean it is.

If you want a firm summer sausage,use beef.If you want it softer,use pork.Reinhart has the ratio about right if you need to add pork or beef.All depends on how much fat is in the buffalo.With venison you don't want any fat.Buffalo fat,being more like beef would be OK.
