bloc004 Posted December 9, 2011 Share Posted December 9, 2011 This is my smoker. I use a propane burner in the bottom for heat and smoke. I have only used my door thermometer and haven't noticed and major "hotspots" inside, but I think next smoke, i am going to put a couple instant read thermometers in, just to know exactly what the difference between the bottom and top rack is. Gordie Posted December 9, 2011 Share Posted December 9, 2011 I have a home bulit smoker and this last batch of duck jerky the top did get a little more done the bottom rack the center therometer I dont like it to get over 165.
