reinhard1 Posted November 24, 2011 Share Posted November 24, 2011 for one pound of ears, 8 cups of water1/4 cup of saltbring water to simmer and add the ears. let simmer for one hour. then remove the ears and let dry on paper towels. get the smoker going with hickory chips [follow direction on package] and get the smoker to 200 deg. this can take up to 6 hrs. check the smoker every two hours to see if everything is going good [heat,chips]. remove the ears when they have the rich dark leathery look and are hard. let cool.if using charcoal put the ears in indirect heat. i got this from googling smoking pig ears for i have never done this. good luck.
