You don't need to heavily season it. Just make hamburgers like you normally would with beef and you'll be surprised how good they are. Elk has a fairly mild flavor with some slight gaminess to it, but not anywhere near overpowering.

Anything you make with beef, can be made with elk. We go through many pounds a summer in burgers.

Smoked Elk Enchiladas is one the staples at our annual game feed. Elk is delicious as stated above anything you make with beef you can make with Elk.

I recently made Elk summer sausage and elk jerky. It is great tasting meat and both turned out great!
