Down to the trimmings...what to make?

Kind of looking through the ground beef thread and it got me thinking: I'm down to roasts and ground venison in my deep freeze and that's about it (besides fish...but I already know what to do with fish). With the cold weather on the move, I was thinking some venison chili would hit the spot. But I also have about seven 1/2 pound bags of ground pork, so I could always do a venison/pork mix in a dish.

Any ideas? The only things I've made out of the ground venison this year were burgers...and believe it or not, I'm about burgered out. Anyone got a good venison meatball recipe?

As for the roasts, I have a mean stroganoff recipe that I'm saving for those, but I think the wife may have had her fill of that. I suppose I could just grind up the roasts, too, but I'm not sure.

I love and hate this time of year: that vacant freezer is pretty depressing to look at...but I sure am looking forward to filling it again!!!

Mix that ground venison with some chopped bacon, pan fry-grill, whatever...It's delicious!! I ground my venison this year with bacon and it didn't take long for it to all disappear!

Take those roasts and make some jerkey for fishing/hunting!

Of course you could always slow cook those roasts and then have shredded beef/venison sandwiches...always amazing!

Ground pork + ground venison = sausage! Seriously, look up some seasoning recipes online. Google with make your head spin. Good for breakfast, dinner, and supper.

I'd do chili or stew or fajitas with the roasts, I'm more partial to cut meat instead of ground in chili and stew.

You could do tacos or marinara sauce (spaghetti, lasagna) with the venison and pork...

I have about 20 pounds of Italian sausage I made this spring. We're still working on it, and my wife isn't the biggest sausage eater so I'm consuming the batch a bit at a time. With the frost we had yesterday, I got a serious hankerin' for chili. I think I'll be taking a gander at that recipe you posted, reinhard1. Thanks!
