Jim Almquist
What we like to do is spray a light coat of oil and then season both sides of the fillet with either Old Bay or some Louisiana Cajun seasonings. I will then slice up a lemon into to real thin slices and lay some down on the oil and then lay down the fillet and cover the top with the rest of the lemon slices. I will also use Mrs. Dash and if I want to kick it up a little then you break out the "Slap Ya Moma" but that stuff can make your food to hot in a quick hurry.
