reinhard1 Posted May 8, 2011 Share Posted May 8, 2011 same old same old. here is a flavorfull potato salad:6 to 8 midium potatoes1/2 cup clear italian dressing[not any creamy kind]1 cup chopped celery1cup chopped cucumber1/2 cup chopped parsley1/2 cup chopped sweet red and /or green peppers1/2 cup chopped green onion1/2 cup sliced radishes1/2 cup mayonnaise1/2 cup sour cream1/2 cooked bacon, crumbled1/2 cup chopped walnuts,toastedpeel and cook potatoes; chop and put them in a mixing bowl [about 6 cups] while potatoes are still warm, pour over italian dressing; let cool.add chopped and sliced vegetables. combine mayonnaise and sour cream; pour over poptatoes and vegetables. mix well. chill to blend flavors. top with crumbled bacon and walnuts just before serving. make sure when frying bacon it is nice and brown and crisp. good luck. McGurk Posted May 9, 2011 Share Posted May 9, 2011 Looks good, but tough to crumble "1/2 cooked bacon." Still pretty rubbery. Oh, you covered that at the end. Love that this has ZERO added sugar other than what's in the ingredients themselves, and I'm gonna try this out this summer! I also like to add chopped up hard boiled eggs to my tater and macaroni salads. When stirred in the yolks kinda act as a thickener/binder. Some whole grain mustard is nice in there also... reinhard1 Posted May 10, 2011 Author Share Posted May 10, 2011 when the potato salad is first made my mom used to serve it warm, and skipped the cooling part. as germans warm potato salad freshly made was the rule. however i have grown to like it cold. i like the idea of the eggs and mustard added on. i just felt adding eggs to this one would make it richer than it already is. but a few eggs wouln't hurt at all. mustard always adds that needed character to it. good luck. good luck.
