Eating A Sturgeon??

I gotta try some, sometime in my life, I believe you can only catch harvest one a year. The regulations are tight, on most of them. Normal everyday, no it's not really normal for say, but sturgeon fisherman are out there, and a lot of them eat them.

Ask this same question on the LOW thread they really like them. I see a 80+yr. old fish that eats off the bottom for the most part.As Mr.Gibbons said "many parts are edible" metro

I have eaten sturgeon quite a few times. We have always gotten it smoked,and it is the best smoked fish I have had. We have smoked 35 inchers to a 65 incher we caught a few years ago. Give it a try.

They are VERY GOOD smoked! I choose to release them, I don't really care to kill such an old fish and I am sure they are quite loaded with contaminents, nothing against other folks keeping one but its not for me.

I've tried sturgeon before and they are very good tasting. Probably the best tasting fish for me anyways. We also visited some relatives down in OK and they had some paddlefish fried and it was also very tasty. Tasted the same as sturgeons. Yummy.
