reinhard1 Posted January 27, 2011 Share Posted January 27, 2011 swedish sausage: 9 lbs. potatoes.- 2 tbsp. salt.- 3 lbs. venison or beef cut into small chunks.- 1 1/2 pounds of pork butt cut into small chunks.- 1 large onion chopped.- 1 1/2 tbsp. black pepper.- 1 1/2 tsp. white pepper.- 1 tsp. allspice. hog casings. : peel the potatoes,boil in salted water for about 10 min. or until they are still very firm in the center and chop. mix the potatoes and all the other ingredients together and grind through a fine plate and then stuff into casings. i make rings and tie the ends with cotton string. my favorite way of preparing them is to simmer the ring in beer and onions for 20 min. turning them over now and then. i [PoorWordUsage] a few holes in the casing prior to simmering. then i brown the ring in butter or on the grill or george forman. good luck. reinhard1 Posted January 28, 2011 Share Posted January 28, 2011 maby a little bit more allspice and onions. not much allspice because a little goes a long way. try it as it is first and then maby you want to tweek it a bit. it is a good flavor the way it is but not everyone has the same taste. this is a small batch so try it and if you like it just double it. good luck.
