Stuffed Pasta Shells

Last night I was hungry for pasta, so I made some stuffed shells and it was pretty easy.

I cooked the shells as normal, then drained and rinsed them. At the same time I browned 3/4lbs of hot italian sausage. At the end I added in a bunch of diced onions and garlic. In a side bowl, I beat an egg, added a bunch of parmesan cheese, a 15oz tub of ricotta cheese, a bunch of dried bread crumbs, italian spices like basil and oregano, pepper, salt, then added the sausage mixture. I stirred it all up, spooned the stuffing mix into the shells, and placed them in two 9x13 glass baking dishes. I had a tub of homemade pizza sauce left over from a week or two ago, so I poured that over the top of all the shells.

I baked them covered in foil for 30 minutes at 400 degrees. Pretty darn good.

I havent made them in a while, I need to make em soon...

I usually end up making 3 diff kinds, lol. Same basis as yours minus the onions and instead of sausage i'll add some cooked chopped shrimp and crab meat. Then some with spinach n sausage, and finally some with sausage and mushrooms...

Oh yeah, duh, I had spinach in there as well! Thanks for the reminder Dark Cloud.

Crab meat sounds like a great idea too.
