I AM A KITCHEN MGR IN A RESTAURANT IN CENTRAL MN. WE HAVE WALLEYE ON OUR MENU AND IT TASTES GREAT! IT IS SHIPPED TO US FROZEN STRAIGHT FROM THE COLD CANADIAN WATERS. THEY ARE 8-10 OZ. FILETS WITH VERY LITTLE TO NO BONES. WE BREAD THE FILETS IN "GARY ROACH" WALLEYE BATTER AND EGG WASH. WALLEYE IS ALMOST ARE MOST POPULAR ITEM ON THE MENU. I SAY THUMBS UP TO WALLEYE IN RESTAURANTS!

The only time I really felt terrible about ordering walleyes in a restaraunt was I believe last year when we stayed at Eddy's on Mille Lacs. After fishing all day and throwing back all of our fish because they didn't fit the slot, we went into Eddy's resteraunt for supper. After ordering the walleye dinner, it donned on me what I was doing... the walleyes I would be eating were probably the netted walleyes out of Mille Lacs. Funny I have never been back to Eddy's resort after this meal.... If you aren't aware Eddy's is owned by the casino outside Garrison.

I am a chef/kitchen manager. The walleye that I serve is from canada. We can order it in 2-4,4-6,6-8,8-10 ounce sizes. It is netted commercialy from various lakes in Canada not Mn. I will try to find out where it comes from on Wednesday,since I need to order 80 pounds to make it through the weekend. If other restaurants are serving ocean perch, pollock or cod they should advertise that. I have seen fillets that weigh 15 ounces with the skin on, so I know that it was a walleye. How would you have liked to catch that one smile.gif I would of let that one go and had a replica made.

I have ordered Walleye in a resturant, but doubt I will do it again. The first time I ordered it, it came to me looking at me! Everything was there, skin, head, tail, eyes. All they did was gut it, and dip it in batter. Sorry, I like mine filleted! So at a different place I thought I would try it again. It wasn't bad, but nothing to write home about either. I love almost all kinds of fish I have ever tried...fresh and saltwater. But the only way I will eat walleye anymore is right after I have filleted it and cooked it. Well, that and if my parents cook it, they have it down to a "T"!

The only walleye I have ever ordered was about a month ago down at The Hubble House. It had crab stuffing and dill sauce. Not too shabby. It was a special occasion. But to me, it seems a bit weird to be ordering walleye at a restaurant in a state where it's the state fish! Is there such a thing as "farm raised" walleye. I know alot of trout in restaurants is farm raised..

I catch and release 95% of my fish. I think others should too. Why keep walleye when you can get them in stores, resteraunts, etc.? Hey, commercial netters have to feed thier familys as well. As long as the walleyes aren't from Minnesota...Why should I care? Now if they were to take them from MN... it would be a differant story! Sort of like, "Not in my backyard!", but they're not. Save the walleyes!......I think????

The Mrs. and I just finished a Gordy's fish sandwich tonight, 4-5 fillets on a bun cannot be beat for a $4.00 sandwich. Oh and yes we had the famous rings also.
