Dark Cloud Posted June 27, 2010 Share Posted June 27, 2010 If you like corn bread and/or pancakes, you should try these. They are basically a pancake made from cornmeal. You can use any cornmeal but I prefer a stone ground... Mix 1 cup cornmeal 1 teaspoon salt 1 teaspoon sugar and a good dash of pepper Now bring one cup water to a boil and wisk it into the dry ingrediants. Blend well and let sit for 10 minutes. It will be thick. Then add one egg and some milk till you get a consistancy of slightly thick pancake batter. Now fry like pancakes on a med griddle thats been lightly buttered. You can warm an oven to 200-225 degrees to keep them warm or serve em as they come off the stove. You can add all kinds of stuff to them... My girlfriend likes a couple over easy eggs on hers. My mom, just butter. My dad likes maple syrup or his homemade raspberry jelly. My favorite is to take a few of those nacho style jalopenos and chop em up into the batter then drizzle some honey over em when they come out of the pan... This dish goes back to the early settlers.
