Mike Steckelberg
Anyone have any good rabbit or squirrel recipes?
motley man
Very easy - Brown on sides and put in crock or dutch oven - put potatoes, carrots, onion around edge and pour in wine to cover all - simmer four approx: 4 hours or until meat falls off bone - use sauce for gravy over potatoes - Also works great for ducks
Mike Steckelberg
any kind of wine in particular?
buddha
Both of those critters work well with motley's recipie. I have made squirrel gumbo and that is awesome. Just search and find any good gumbo recipe and sub squirrel for any of the meat. The tree rat can be a little tough but the long cooking time of the gumbo really helps. Rabbit falls apart too easy but still works for gumbo too.
MNHuntress
Well if these were my bunnies,I'd make Hasenpfeffer, which means rabbit stew in German. Boy is it nummy! Do a search on Hasenpfeffer recipes and give it a try. I've also done sauerbraten with rabbit for a big wild game feed, that was also a hit. Chef
Mike, typically you'd want to use a dry hearty red wine with both of these meats.Syrah, Cabernet, Merlot, Petit Syrah, Zinfandel (Not White Zin).
