Dark Cloud Posted January 30, 2010 Share Posted January 30, 2010 I made this tonight and it came out great! I found a bunch of recipies on-line and modded up this one... I had this. 2 1/2 pound boneless pork loin 2 pounds of bone-in country style ribs cut 1 ring of kielbasi 2 pints of sauerkraut 1 onion halved and sliced 3 stalks of cellery chopped 2 apples peeled and chopped 1 large tomoto chopped 1 quart of veggie stock 1 or 2 tablespoons of brown sugar a few splashed of hot sauce... I seasoned the loin and ribs with salt, pepper, and garlic powder and seared them on all sides in a little olive oil then removed from the dutch oven. Toss in the onions and celery and saute for a few minutes. Add the stock, kraut, and ribs - simmer covered for about 45 minutes then add the apples and tomatos. Then plop the loin in and cook till it gets up to 140 internally - about an hour. (to be honest everyone liked the ribs way more than the loin and next time I make it i'll double up on ribs and leave out the loin) Towards the end I added the smoked kilebasi chunked up and some brown sugar, plus some hot sauce(seemed sweet so I wanted to balance it out). My kraut was a bit salty so I didnt add any to the dish but did add some black pepper... My mom and girlfriend dont like sauerkraut but really liked this dish!
