When I cook my bird I tend to do a lot of things by habit and forget when I tell others but I like to use charcoal in the steel bins that keep it off to the sides but I like to throw in some chunks of hickory in the baskets once the charcoal gets going. Some times I will soak it but more often I will just put it in dry.
