Jim Almquist Posted November 17, 2009 Share Posted November 17, 2009 When I cook my bird I tend to do a lot of things by habit and forget when I tell others but I like to use charcoal in the steel bins that keep it off to the sides but I like to throw in some chunks of hickory in the baskets once the charcoal gets going.
