riverrat56 Posted April 3, 2009 Share Posted April 3, 2009 Just thought I'd share one of my favorite side dishes (just put the left over in the fridge), acctually this could pass for hotdish sometimes... 5 lbs potatoes, washed and scrubed 1 lb bacon, diced into 1/4 slices 1 medium white onion or small bunch of green onions, diced 3-5 cloves of garlic, minced (powdered or otherwise will work also) 8 oz Shredded cheese (Preferably finely shredded, Mexican blends work well) Milk Butter Pretty simple really, and completly unhealthy Boil potatoes, skin on, until soft, fry diced bacon until crisp. Take bacon off heat and drain about 2/3 of grease off. Add onions and garlic to cooked bacon. Mash potatoes with large spoon, add in bacon/onions/garlic plus cheese and about a half stick of butter and a half cup milk. Whip with hand mixer until desired consistency, I like mine fairly chunky.
