Roofer
The age of the house doesn't matter. When you do something, that part has to be up to code. Get R-11 or R-13 your choice for the walls. Get at least R-11 (probably R-19 or better) for the ceiling. Sheetrock the ceiling first using 5/8 or 1/2 "ceiling rock". Then do the rest of the walls with 1/2" sheetrock. The fire wall should already be done against the house. Make sure you have everything in the walls before you start,(electrical, phone,tv???). I would also build in an access, if you don't already plan on a pull down stairways. It does get a little spendy, but if you are going to do something, you may as well do it right. It will pay off in the end. I ran all new wires in my garage and new boxes & outlets, but my house was built in '77. You could plan an area for a bench or something and put OSB or plywood there. Alot of things you could do, and it always comes to you too late, if you know what I mean.
