Tom Linderholm
Tis the season for some great local apples up here in the north. With Bayfield Applefest happening this weekend I thought it would be appropriate to throw this recipe out there for you all. Apple Brie Chicken 4 chicken breasts pinch of fresh tarragon (chopped) Salt and pepper your chicken and rub with the fresh tarragon. Pre heat your saute pan, add just enough oil to coat the bottom to prevent sticking. Sear chicken on one side till golden brown. Flip and finish in the oven at 350 degrees till the breasts reach 165 degrees. Remove from oven and put back on the flame. Now for the sauce 2oz brandy 3oz heavy cream 3oz brie (rind removed) 1 apple (skin removed and thinly sliced) Add your apples and brandy to the pan (Beware of flame) and simmer till the brandy extinguishes itself. Next add your brie and cream and simmer till the brie dissolves in the sauce. Now it's ready to serve.Enjoy!
