blue_healer_guy Posted August 4, 2007 Share Posted August 4, 2007 This is pretty good.20 tomatoes peeled and mashed3 chopped green peppers3 onions chopped3-4 jalepeno peppers chopped2 cans green chilies2 12 oz cans tomato paste1 teaspoon cumin2 teaspoons oregeno3 tablespoons garlic powder1/2 cup sugar3 tablespoons salt1 cup vinegar (cider)1/2 cup lemon juiceMix all together. peder Posted August 4, 2007 Share Posted August 4, 2007 2# red ripe tomatoes6-8 serrano chiles, stemmed8 cloves garlic unpeeled1 small white onion, finely chopped, rinsed and drained1/2 bunch cilantro, choppedabout 2 teaspoons cider vinegara large pinch dry oreganoa large pinch cuminabout 1-2 teaspoons saltRoast tomatoes on a baking shheet under broiler unti blistered and skins slightly blackened on all sides. Remove allow to cool. Peel and discard skins.Place chiles and garlic in a dry skillet over medium, turn often until blackened in spots. Remove from heat allow to cool, peel cloves.Place garlic, chiles, and salt in food processor or blender, grind into a corse paste. Add tomatoes and their juices and pulse to coarse puree. Pour into nonreactive bowl, stir in remaining ingredients. Enjoy!This will also can very well. Another variation is to add some canned chipotle peppers for a smokey flavor. BobT Posted August 5, 2007 Share Posted August 5, 2007 Absolutely! I'll share.16 C. Coursely chopped Tomatoes 2 C. Seeded and Chopped Green Peppers 2 C. Chopped Onions 6 Chopped Cloves Garlic 3 tsp. Salt 2 tsp. Black Pepper 2 Tbls. Chili Powder 2 tsp. Cumin 4 tsp. Sugar 3 tsp. Brown Sugar ¾ C. Vinegar Up to 2 Chopped Jalapeno Peppers, 3 Chopped Banana Peppers, and 3 Chopped Chili Peppers. Remove seeds if desired for less heat.Cook everything for 2-4 hours on medium-low heat. Place in containers for the freezer.This is great on eggs too.Enjoy. Salsa Fresca: 4 ripe tomatoes, chopped 1/4 red onion, chopped 1 jalapeno, minced 8 cilantro sprigs, chopped 3 garlic cloves, minced Juice of 1 lime 1/4 cup olive oil 1/2 teaspoon salt Maybe a bit "boring" compared to some, but again, simple and tasty...
