How do you can fish? Anyone care to explain.

I would like to smoke some suckers, and then can them. I have never canned anything before so I'm looking for some tips. Is there anyone out there that can explain to me a good way to do this?

Get yourself a good home canning book and follow it religiously.. Two I know of are the "Ball Blue Book of Preserving" and "Kerr Home Canning". I use the Kerr Home Canning book. I believe the U.S. Dept of Agriculture and the Minnesota Ag Extension at the university also have publications about home canning.
