I typically will use the shells to make the stock but you can save a little time by substituting baseHere is a recipe for Lobster Bisque that can easily be transformed into Shrimp.Lobster Bisque Recipe1 cooked Lobster & Shell1 cup white wine1 cup brandyIn a stock pot over high heat drop the cooked lobster shell (set meat aside) in and begin to brown, then add the wine and brandy and reduce. 6 cups water12 pepper corns1 bay leave1 medium onion (rough chop)1 carrot (rough chop)2 stalks celery (rough chop)After the wine, brandy and Lobster Shell reduce to about a half cup of liquid add the water, peppercorns, bay leave, onion, carrot, and celery. Turn to low heat and simmer for 45 minutes. Strain and reduce to half.6 cups Heavy whipping creamRouxLobster meat (medium chop)Add cream and bring to a boil, then add roux until desired thickness.
